The rind is bathed in labor, and usually a softer cheese has a more palatable rind. So we include the rind in our sensory analysis of soft cheese, but we don’t mark a hard cheese down if the rind is less enjoyable. But as one of my favorite cheese peeps says - ‘Rind your own business’ : if you like it, go for it!

…or large animals. Our border collie is incredibly well behaved. She has counter surfed twice in her life, having each time stolen Harbison off our cheese board. Nothing else was disturbed, and we found the squeaky clean spruce rind in front of the fire place. We think she has very good taste. :)
